Dough: Set the oven to 180 degrees celcius. Mix all ingredients except for milk until the mixture has a consistency like bread crums.
Add milk and form a dough ball without over working the dough. If you do, the dough wont be crumbly.
Flatten the dough with a rolling pin and cover a pie tin with it. Remove excess dough.
Bake the pie crust in the oven for 20 minutes. Once done, lower heat to 140 degrees celcius.
Lemon Curd: Mix all ingredients except for butter in a sauce pan.
Heat on medium heat while whisking constantly.
When it starts to thicken, remove from heat and add cold butter. Whisk some more.
Pour it over the pie crust and let cool in fridge.
Meringue: Add eggs, lemon juice and salt in a bowl.
Whisk slowly at first to combine the ingredients.
Increase speed and add the sugar a little bit at a time. Whisk until you have a good consistency. You should be able to turn the bowl upside down.
Spread the meringue on top of the curd.
Bake inte the oven for 30 minutes.
