Pinch holes in the skin of the sweet potato with a fork. Bake in the oven at 220 degrees celcius for approx an hour
Peel the sweet potato, and mash it with a masher or preferably with a mixer in a bowl
Add 2 dl of cold water and stir. The main goal of this is to cool down the potato a little bit.
Add the rest of the water, the salt and the yeast. Stir some more
Start adding flour to the mix and stir and stir. I normally add approx 2.5 dl per time, and stir. Do this until you have an even dough.
Cover the dough and let it rise for approx an hour.
Work the dough a little on a floured surface. Cut it into 16 pieces (or another amount based on the size you want on your bolo de caco) and flatten them out till approx 2 cm thick
Put them on a baking paper-covered baking tray, and let them rest for 30 more minutes
Bake in the oven at 225 degrees celsius for 15 minutes
